Method
The chef moveSimmer low and slow in plenty of olive oil, not a quick hot sauté — the beans need time sitting in fat to actually taste like something.
- Warm olive oil over low heat. Add sliced garlic and rosemary, cook gently until the garlic turns pale gold, 3-4 min — do not let it brown hard.
- Add beans with a splash of their canning liquid. Simmer low 12-15 min, mashing a few against the pan to thicken.
- Off the heat, finish with lemon juice and salt.

Why simmer the beans in oil for so long instead of just heating them through?
Canned beans are already fully cooked, so the goal isn't doneness — it's absorption. Held at a low simmer in fat and aromatics, the beans slowly take on the garlic and herb flavors carried in that oil, the same way blooming spices works. A fast reheat skips that window entirely.
Why mash a few beans against the pan?
Bean starch released into the liquid thickens it slightly and gives the dish body, turning thin canning liquid into something closer to a light sauce that clings to the rest of the beans instead of pooling underneath them.
