Method

The chef moveA pinch of cumin and a strip of lime peel in the brine makes them taste intentional, not just sour.
  1. Warm vinegar, sugar, salt, and cumin until dissolved.
  2. Pour over carrot batons in a jar. Cool, lid, refrigerate. Ready in an hour, great all week.

Why does a quick pickle keep for weeks in the fridge?

The vinegar drops the pH low enough that spoilage microbes can't grow. That acidity is doing preservation and seasoning at once — which is also why a splash of something acidic wakes up almost any rich dish.
