Method

The chef moveSmash the chickpeas flat before they hit the oil — more crisp surface per bite than frying them whole, so every forkful gets the crunch, not just the top layer.
  1. Drain and pat chickpeas very dry; smash lightly with a fork so they crack open, not turn to paste.
  2. Pan-fry in oil over high heat, mostly undisturbed, until crisp and browned in spots, 6-8 min. Season with cumin, smoked paprika, salt.
  3. Char thin red-onion wedges in the same pan.
  4. Stir yogurt with lime juice, chopped cilantro, and salt for the crema.
  5. Warm tortillas; build with crispy chickpeas, charred onion, crema, more cilantro.

Why smash the chickpeas instead of frying them whole?

Smashing cracks the skin and exposes the starchy interior, roughly doubling the surface area that actually touches hot oil. More contact with the pan means more Maillard browning per chickpea, so you get a crisp, almost popcorn-like shell instead of a soft bean with one browned side.

Why pat them dry before they hit the oil?

Canned chickpeas come packed in liquid, and that surface moisture has to boil off before oil can actually fry rather than steam them. Dry chickpeas start browning within seconds; wet ones just hiss and stay pale.
