Method

Why start the mushrooms in a dry pan with no oil?

Mushrooms are mostly water held inside a spongy structure, and oil added too early just gets absorbed and traps that water in, steaming the mushroom instead of browning it. A dry, hot pan forces the water out first — once the pan stops hissing and the mushrooms look dry, that's the signal that oil can finally do its job of frying instead of soaking in.

Why tear the mushrooms instead of slicing them with a knife?

A clean knife cut leaves smooth, flat faces. Tearing by hand rips along the mushroom's natural grain, leaving ragged, irregular surfaces with far more total area exposed to the hot pan — more surface area means more contact points for browning, the same logic behind smashing potatoes instead of leaving them whole.
